Im about to drive from seattle to portland in my truck next weekend with my motorcycle shop. Is it ill advised to run at 70mph (roughly 3500 rpm for me) for a while? Ive never ran it consistently over 60 because it sounds like its working too hard but Id like to hear some experience from someone else. Thanks!

I go 55-60 on the 5 everyday . But I'm only going from shoreline to Sodo .

I drive from Seattle to Portland about once every month 1/2 and from North Seattle to Seattle Center every day for work with no engine problems. I have a rebuilt 300 in my van though.
Steering is another question - I can get a little squirrely in the high 60s/low 70s if there is a strong side wind. that's more due to the van sides [vs. your empty truck bed] and no sway bars.

Our vans are pretty tough. I used to run my 63, 144 engine wide open for 3 1/2 hours 4 times a week. Just make sure the fluids are OK and have fun.
