I want to make my 67 a nodoor by using the two doors as Panels and welding them in. Has anyone done this and is using the two doors the way to go?

Hm, I got a feeling that it'll be difficult to get it right.
Since the doors themselves are different pieces of metal, it'll be difficult getting it all smooth and consistent with the rest of the body.
Otherwise, no idea how'd you do it.

There is a slight bow out thru that section. I've have and have seen guys turn them into gull wings. Myself I would consider finding a "parts van" with good driverside sheet metal and a couple ribs and replacing the doors completely. Not an easy thing either or any way you go. Consider a fiberglass gull wing to get the look?

It has been done. It doesn't look as believable as one would like. It's not as easy as it would "seam".
These days, it may be easier to just find a no-door and save the trouble. If resale is ever in your future, I've seen a few custom no-doors have trouble selling.
